Tonight Dr Lucy whips up this delicious dessert inspired by Maria Emmerich. Experience the remarkable scrambled egg chocolate mousse that defies expectations and eliminates any hint of egg taste. This heavenly creation combines protein, fat, and flavour, making it a fantastic option to elevate your protein intake. If your main dish is lean on protein and you feel like a delicious, sweet conclusion to your meal, this mousse is the perfect solution.

Ingredients:

  • 10 scrambled eggs, cooled
  • 2 teaspoons vanilla essence
  • 400ml coconut milk
  • teaspoon cinnamon
  • ⅓ cup of organic cacao powder or cocoa
  • ½ cup of Lakanto Bakers Blend Sweetener
  • pinch of salt

Instructions:

  1. Place all ingredients in a blender or thermomix
  2. Blend until smooth and creamy
  3. Refrigerate
  4. Enjoy!

Things to try:

  • If you aren't a fan of the taste of coconut, replace the coconut milk with cream
  • Experiment with how much cacao you like
  • Add coffee for a mocha flavour
  • Add a few drops of peppermint or orange essence
