Roast Chicken Air Fryer - Cooking, Coaching & Conversations with Dr Lucy Burns

Using her trusty air fryer, Dr Lucy roasted a whole butterflied, de-boned chicken coated in herbs. Served with a simple tomato and avocado salad, it is a delicious and nutritious weeknight meal. Dr Lucy also made a quick dessert using Lakanto sugar free maple syrup and rhubarb.
Salad Ingredients
- tomatoes, chopped
- avocado, chopped
- olive oil
- salt and pepper
Salad instructions
- Toss all ingredients together and serve with roast chicken or your favourite protein
Rhubarb Ingredients
- rhubarb, chopped
- water
- sugar free maple syrup
Rhubarb Instructions
- Add rhubarb to a saucepan, and cover with a small amount of water.
- Add a splash of sugar free maple syrup and simmer until the rhubarb is cooked.
- Serve with a dollop of cream.
