Dr Lucy's Melt-In-Your-Mouth Curry (Pressure Cooker)

We all love to make delicious food that's quick and easy, and you really don't get much quicker or easier than this pressure cooker curry. It is absolutely divine and will melt in your mouth.
Recipe Overview:
- Prep Time: 5 minutes
- Cooking Time: 30 minutes using a pressure cooker (start it and walk away!)
Ingredients:
- 1kg of diced lamb
- 1 Tablespoon olive oil
- Half a capsicum, chopped
- 200g of green beans, chopped
- 1 zucchini, chopped
- 1 sachet Mingle Sri Lankan Curry
- 100g onion, chopped
- 1 teaspoon of salt
- 1/2 a cabbage, chopped
- 400g of coconut milk
Instructions:

Open the Pressure Cooker: Add 1 tablespoon of olive oil to your pressure cooker.

Layer the Ingredients:
- Start with the meat.
- Add the chopped capsicum, green beans, and zucchini.
- Sprinkle in the Mingle Sri Lankan Curry flavor sachet.
- Add the chopped onion.
- Season with 1 teaspoon of salt.

Add Cabbage and Coconut Milk: Layer the chopped cabbage on top of the other ingredients, and pour in the 400g of coconut milk.

Pressure Cooking: Seal the pressure cooker and set it for 30 minutes.

Serve: After the pressure cooker cycle is complete, your delicious and nutritious curry is ready to be served. It couldn't be easier! There's no doubt that real food is indeed medicine.
