Fast Food Doesn't Mean Fake Food

A 20-Minute Mexican Marvel

In a world where drive-throughs beckon and takeaway apps tempt, it's refreshing to know that real, wholesome food can be just as quick. This Mexican mince recipe proves that fast food can be nutritious, delicious, and ready in less time than it takes to wait for delivery.

Why This Recipe Works

The beauty of this dish lies in its simplicity. By using clever shortcuts like pre-sliced mushrooms and frozen capsicum, we eliminate tedious chopping time without compromising on nutrition or flavour. The Mingle seasoning mix delivers instant authentic Mexican flavours without the need to measure multiple spices.

Time-Saving Tips

Smart Ingredients

  • Frozen capsicum requires zero prep - simply pour and cook

  • Pre-sliced mushrooms eliminate chopping time

  • Quality seasoning mix provides instant flavour

  • Passata delivers ready-made tomato base

Efficient Cooking Method

While the mince browns, you have time to prepare any sides or toppings. The entire dish comes together in one pan, meaning minimal washing up and maximum efficiency.

Fast Mexican Mix

Ingredients:

  • 1kg lean beef mince
  • 1 packet Mingle Fajita seasoning mix
  • 250g sliced mushrooms
  • 500g frozen tricolour capsicum mix
  • 700ml passata
  • Salt and pepper to taste

Optional Toppings

  • Grated cheese
  • Sour cream
  • Fresh avocado

Instructions:

  1. Heat a large non-stick pan over medium-high heat.
  2. Brown the mince in batches, breaking up any lumps with a wooden spoon until well browned (approximately 5-7 minutes).
  3. Add the sliced mushrooms and cook for 2-3 minutes until they start to soften.
  4. Add the frozen capsicum mix directly to the pan - no need to defrost.
  5. Sprinkle over the Mingle Fajita seasoning and stir through.
  6. Pour in the passata, stirring to combine. Simmer for 10-15 minutes until the sauce thickens slightly.

Serving Suggestions:

Serve in bowls topped with your choice of grated cheese, a dollop of sour cream, and fresh avocado. For a complete low carb meal, serve over cauliflower rice or with a fresh green salad.
