Yoghurt Parfait - Cooking, Coaching & Conversations with Dr Lucy Burns
Apr 19, 2023In cooking, coaching and conversations this week, Dr Lucy made a traditional weeknight dinner of steak and veg! Using the airfryer Dr Lucy roasted cauliflower, cooked her steak and served it with some steamed zucchini. To serve afterwards, Dr Lucy made a simple protein-packed yoghurt parfait with some berries, Greek yoghurt and hemp seeds. Low carb real food can easily be simple, delicious and nutritious!
YOGHURT PARFAIT
Ingredients
- Greek yoghurt
- hemp seeds
- berries
Instructions
- Layer in a glass or bowl to serve.
STEAK & VEG
Ingredients
- zucchini, chopped
- cauliflower, broken into florets
- olive oil
- herbs & spices
- steak (brought to room temperature)
- salt
- butter
Instructions
- Toss the cauliflower florets in olive oil, salt and herbs or spices of your choice.
- Cook the cauliflower in the airfryer.
- Season the steak with a drizzle of olive oil and a sprinkle of salt.
- Once the cauliflower is cooked, remove it from the airfryer.
- Cook the steak in the airfryer.
- Cook your zucchini however you like.
- Once the zucchini is cooked, toss it with butter and salt to serve.
