Quick and Easy Lamb Tikka Masala

This Lamb Tikka Masala is a delicious, real-food alternative to traditional carb heavy Indian dishes. It's packed with tender lamb, nutritious veggies, and aromatic spices that will transport your taste buds straight to the heart of India.

Ingredients:

  • 1 kg diced lamb
  • 1 onion, finely chopped
  • 1 sachet Mingle Butter Chicken Seasoning
  • 500g diced pumpkin
  • 700ml passata
  • 1 red capsicum, diced
  • 2 handfuls of baby spinach
  • 2 tablespoons sour cream

 

Alternate to Mingle Seasoning Tikka Masala Spice Mix Recipe

Ingredients: 

  • 2 tablespoons ground coriander
  • 2 tablespoons paprika powder (or Kashmiri chili powder)
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried fenugreek leaves 
  • 1/2 teaspoon ground nutmeg 

 

Instructions:

  1. Put all the ingredients in the pressure cooker, stirring to combine all ingredients thoroughly. (alternatively, put it in a slow cooker and cook for 6 hours) 
  2.  Close the lid of your pressure cooker and set it to cook for 25 minutes. 
  3.  Once the cooking time is up, allow the pressure to release naturally for about 10 minutes before carefully releasing any remaining pressure. 
  4.  Open the lid and stir in the spinach leaves and 2 tablespoons of sour cream. This will add a lovely creaminess to your dish without significantly increasing the carb content. 
  5.  Taste and adjust seasoning if necessary.
