This week on cooking, coaching and conversations Dr Lucy whips up one of her low carb staple recipes - jimmy cakes or chaffles! These are a simple low carb bread alternative made with just cheese and eggs. Perfect for serving with any leftovers you may have.

Ingredients

  • 1 egg
  • 1/2 - 1 cup of grated mozzarella cheese
  • seasonings are optional (herbs, spices etc)

Instructions

  1. Pre heat a waffle maker or pancake maker.
  2. Whisk together the egg, grated mozzarella cheese & seasoning
  3. Place the batter in the waffle maker or pancake maker and cook until it is browned and cooked through.
