Herb mozzarella chicken - Cooking, Coaching & Conversations with Dr Lucy Burns

This week Dr Lucy actually followed a recipe! She made this delicious herb mozzarella recipe, from our fabulous friends, Thermo Foodie & The Chef. This is a very easy weeknight dinner that can be made using a thermomix or without.

A note from Dr LucyLast night I cooked a Thermo Foodie recipe and it is clear that I don't cook with recipes very often. In this recipe, I added the broccoli to the dish and popped it back in the oven. The dish came out and was deliciously tasty but a bit watery. I thought, "this is weird, Thermo Foodie test all their recipes". So I went back and reread the recipe and realised the broccoli is supposed to be served separately. Ahh, reflection is such a powerful tool. 

Ingredients:

  • 600g chicken breasts cut into strips
  • 1/4 cup fresh dill
  • 1 cup fresh mint
  • 1 cup fresh parsley
  • 2 cloves garlic
  • 40g lemon juice
  • 50g olive oil
  • 1 tsp salt
  • 1/4 tsp pepper
  • 150g cherry tomatoes
  • 140g mozzarella
  • 400g broccoli
  • 80g salted butter

Thermomix Instructions:

  1. Preheat oven to 200C
  2. Chop herbs, garlic, lemon juice and olive oil 5 seconds / speed 7 / mc on
  3. Scrape down, add salt and pepper, chop 5 seconds / speed 7 / mc on
  4. Place chicken strips and herb sauce into a large baking dish and mix well
  5. Add cherry tomatoes and bake 15 minutes

For the Broccoli:

  1. Into the mixer place broccoli, chop 5 seconds / speed 5 / mc on
  2. Scrape down, add butter, cook 8 minutes / 100 degrees / speed 1 / mc on – set aside
  3. Top the baked chicken with mozzarella and bake a further 15 minutes
  4. Serve chicken with chopped buttery broccoli

Non-thermo instructions:

  1. Preheat oven to 200C
  2. Chop herbs and garlic until fine
  3. Cut chicken into strips and add the herbs, garlic, olive oil, salt, pepper and lemon juice to the chicken, mix well
  4. Place chicken strips and sauce into a large baking dish and mix well
  5. Add cherry tomatoes and bake 15 minutes

For the Broccoli:

  1. Steam or blanch broccoli until just cooked
  2. Roughly chop and mix in the butter
  3. Top the baked chicken with mozzarella and bake a further 15 minutes
  4. Serve chicken with chopped buttery broccoli.
