Dr. Lucy's Easy Veggie Frittata
Ingredients:
- 12 Eggs
- 100mL Pure Cream
- Salt to taste
- 2 teaspoons Pizza Mingle Seasoning
- 250g Mushrooms, chopped
- 100g Spinach
- 200g Precooked Diced Pumpkin
- 200g Danish Fetta, diced
- 1/2 cup Grated Parmesan
Method:
- Preheat oven to 180 degrees Celsius.
- Crack twelve eggs into a bowl. Beat eggs roughly.
- Add Pizza Mingle, cream, and salt. Mix together.
- Transfer into a large baking dish.
- Sprinkle veggies and fetta across the surface for an even distribution.
- Sprinkle Parmesan on top.
- Bake at 180 degrees Celsius for around 40 minutes or until it stops wobbling.
