Using leftover butter chicken sauce from a takeaway dinner and adding extra chicken to make sure it is protein-packed. Served with cauliflower rice it is a quick, delicious and nutritious meal.
Ingredients
- Leftover butter chicken sauce
- chicken breast or thigh, chopped
- cauliflower rice
- frozen peas
Instructions
- Place your leftover butter chicken sauce in a saucepan and bring to a simmer.
- Add the chopped chicken and continue to simmer to cook the chicken in the sauce.
- Cook the cauliflower rice and frozen peas (or whatever veggies you have on hand) and you can then serve them alongside the butter chicken or make it a one-pot wonder and cook everything together!
