Low Carb Brownies - Cooking, Coaching & Conversations with Dr Lucy Burns
May 10, 2023This week on Cooking, Coaching & Conversations Dr Lucy made a delicious low carb chocolate brownie recipe. This is a simple and easy chocolate brownie that is made by throwing all the ingredients into the blender. This low carb brownie is a great recipe to take along to a social occasion or you can portion it up and pop it in the freezer for an occasional dessert.
Ingredients
- 150g butter or coconut oil
- 1/2 cup boiling water
- 1/2 cup cocoa or cacao powder
- 1/4 - 1/2 cup powdered sweetener (one-for-one sugar replacement)
- 150g almond flour/meal
- 3 eggs
- 1 tsp vanilla extract
- pinch of sea salt
- 1/2 tsp baking powder
Instructions
- Preheat your oven to 350F/180C. Line your baking tin with non-stick baking paper.
- Add all the ingredients to a blender or Thermomix and blend until it is combined. You may need to scrape down the sides and blend again.
- Add the brownie batter to your lined tin and bake in the oven for 20 minutes or until cooked through.
